Broccoli-Spinach Soup with Avocado Toasts



A nutritious and comforting soup featuring the vibrant flavors of broccoli and spinach, paired with creamy avocado toasts for a satisfying meal.

Ingredients:

  • 2 cups broccoli florets
  • 2 cups spinach leaves
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 avocado, sliced
  • 4 slices whole grain bread
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

In a large pot, heat olive oil over medium heat

Add chopped onion and minced garlic, saut until fragrant

Add broccoli florets and spinach leaves, cook until wilted

Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 15 minutes

Using an immersion blender, blend the soup until smooth

Season with salt and pepper to taste

Toast whole grain bread slices

Top each toast with avocado slices

Serve the soup hot with avocado toasts on the side
