The Instant Pot makes it easy to make a quick and tasty Chicken Cordon Blue Casserole. Soft chicken bundles stuffed with ham and Swiss cheese, covered in a rich Dijon sauce, and topped with a crunchy breadcrumb crust.
Ingredients:
- 4 boneless, skinless chicken breasts
- 8 slices ham
- 8 slices Swiss cheese
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 cup chicken broth
- 1 cup milk
- 1/2 cup all-purpose flour
- 1/2 cup unsalted butter
- 1 teaspoon Dijon mustard
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions:
Season chicken breasts with salt, pepper, and garlic powder
Place 2 slices of ham and 2 slices of Swiss cheese on each chicken breast
Roll up chicken breasts and secure with toothpicks
In a bowl, mix breadcrumbs and Parmesan cheese
Roll each chicken bundle in the breadcrumb mixture to coat
Turn on Instant Pot to saut mode and melt butter
Add flour and whisk to form a roux
Gradually add chicken broth, milk, Dijon mustard, stirring until thickened
Place the chicken bundles in the Instant Pot
Pour the sauce over the chicken
Close the Instant Pot lid, set to sealing, and cook on high pressure for 12 minutes
Quick release the pressure and carefully open the lid
Sprinkle with chopped parsley before serving
