Coconut White Chocolate Fudge

Ingredients:

  • 2 cups white chocolate chips
  • 1/2 cup coconut oil
  • 1/2 cup shredded coconut
  • 1/2 cup sweetened condensed milk
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

Instructions:

Line a square baking pan with parchment paper, leaving some overhang for easy removal

In a microwave-safe bowl, combine the white chocolate chips and coconut oil

Microwave in 30-second intervals, stirring each time, until the mixture is smooth and fully melted

Stir in the shredded coconut, sweetened condensed milk, vanilla extract, and a pinch of salt until well combined

Pour the mixture into the prepared baking pan and spread it evenly

Refrigerate for at least 2 hours or until the fudge is firm

Once set, use the parchment paper overhang to lift the fudge out of the pan
