Ingredients:
- 1 1/2 cups gluten-free all-purpose flour
- 1/2 cup almond flour
- 1/2 cup coconut sugar
- 1/4 cup coconut oil, melted
- 3 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- Vegan marshmallows
- Dairy-free chocolate chips
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a mixing bowl, combine gluten-free all-purpose flour, almond flour, coconut sugar, melted coconut oil, maple syrup, vanilla extract, cinnamon, and salt
Mix until a dough forms
Transfer the dough onto a lightly floured surface and roll it out to about 1/8 inch thickness
Use a cookie cutter to cut out small rectangles for graham crackers
Place the crackers onto the prepared baking sheet and bake for 10-12 minutes, or until lightly golden
Once the crackers are baked, let them cool completely
To assemble the S'mores Bites, place a square of vegan chocolate and a marshmallow on top of one cracker
Microwave for a few seconds until the marshmallow puffs up
Top with another cracker to make a sandwich and enjoy!
