Simple Cucumber Salad



This Simple Cucumber Salad is a refreshing and light side dish that's perfect for hot summer days. The combination of crisp cucumbers, red onion, dill, and feta cheese is both refreshing and flavorful. It's a great addition to any meal or as a standalone snack.

Ingredients:

  • 2 cucumbers, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh dill, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions:

In a large bowl, combine the sliced cucumbers and red onion

In a small bowl, whisk together the olive oil and red wine vinegar to make the dressing

Pour the dressing over the cucumbers and onions, then toss to coat

Sprinkle the fresh dill and crumbled feta cheese over the salad

Season with salt and pepper to taste

Refrigerate for at least 30 minutes before serving to allow the flavors to meld
