Vegan Sloppy Joes



This vegan take on the classic sloppy joes is hearty, tasty, and great for a quick and filling meal. Textured vegetable protein is high in protein, and the tomato sauce is both savory and sweet. It will be a hit with both vegans and non-vegans.

Ingredients:

  • 1 cup textured vegetable protein TVP
  • 1 cup vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can 15 oz tomato sauce
  • 2 tablespoons tomato paste
  • 2 tablespoons maple syrup
  • 1 tablespoon soy sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 6 whole grain burger buns

Instructions:

In a bowl, rehydrate TVP with vegetable broth

Let it sit for about 10 minutes or until softened

In a large skillet, heat olive oil over medium heat

Add diced onion, minced garlic, and diced bell pepper

Saut until vegetables are tender, about 5 minutes

Add rehydrated TVP, tomato sauce, tomato paste, maple syrup, soy sauce, smoked paprika, chili powder, cumin, salt, and pepper to the skillet

Stir well to combine

Simmer the mixture for 10-15 minutes, stirring occasionally, until the sauce thickens and flavors meld

Toast the burger buns lightly

Spoon the vegan sloppy joe mixture onto the bottom halves of the toasted buns

Top with the other halves of the buns

Serve hot and enjoy!
