Ingredients:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup cocoa powder
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup coconut milk
- 1/4 cup vegetable oil
- 1 egg
- 1/2 tsp vanilla extract
- 1/4 cup shredded coconut toasted
- 1/4 cup macadamia nuts chopped
- 1/2 cup semi-sweet chocolate chips
- 1 tbsp butter
- 1/4 cup powdered sugar
- 1/4 cup milk
- 1/2 tsp vanilla extract
Instructions:
Preheat your oven to 350F 175C and grease a donut pan
In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt
In another bowl, whisk together coconut milk, vegetable oil, egg, and vanilla extract
Pour the wet ingredients into the dry ingredients and mix until just combined
Stir in the toasted shredded coconut and chopped macadamia nuts
Spoon the batter into the greased donut pan, filling each mold about 2/3 full
Bake in the preheated oven for 12-15 minutes or until a toothpick inserted into a donut comes out clean
Remove the donuts from the oven and allow them to cool in the pan for a few minutes before transferring to a wire rack to cool completely
In a microwave-safe bowl, melt the chocolate chips and butter in 30-second intervals, stirring between each interval until smooth
Dip the tops of the cooled donuts into the melted chocolate mixture and place them back on the wire rack to let the chocolate set
In a separate bowl, whisk together powdered sugar, milk, and vanilla extract to make the glaze
Drizzle the glaze over the chocolate-coated donuts
Sprinkle with additional toasted shredded coconut and macadamia nuts for garnish
Allow the glaze to set before serving
