Enjoy this classic creamy hummus recipe from the Barefoot Contessa. It's perfect as a snack, appetizer, or party dip.
Ingredients:
- 1 1/2 cups canned chickpeas, drained, liquid reserved
- 1/4 cup fresh lemon juice 1 large lemon
- 1/4 cup well-stirred tahini
- 1 small garlic clove, minced
- 2 tablespoons extra-virgin olive oil, plus more for serving
- 1/2 teaspoon ground cumin
- Salt to taste
- 2 to 3 tablespoons water
- Dash of ground paprika, for serving
Instructions:
In a food processor, combine tahini and lemon juice
Process for 20 seconds
Add minced garlic, olive oil, cumin, and a pinch of salt
Process for another 20 seconds
Add half of the drained chickpeas to the mixture and process for 20 seconds
Scrape down the sides of the bowl
Add the remaining chickpeas and process until the hummus is thick and smooth
If it's too thick, gradually add 2 to 3 tablespoons of water while the food processor is running until desired consistency is reached
Taste the hummus and adjust the seasoning with more salt or lemon juice if needed
Transfer the hummus to a serving bowl, drizzle with olive oil, and sprinkle with a dash of ground paprika for garnish
Serve with pita bread, vegetables, or your favorite dipping choice
