This Gazpacho Minestrone is a delicious and healthy summer dinner option that combines the tastes of traditional Gazpacho with the heartiness of Minestrone. It's a cold soup that's great for summer nights.
Ingredients:
- 6 ripe tomatoes, chopped
- 1 cucumber, diced
- 1 red bell pepper, chopped
- 1 red onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup extra-virgin olive oil
- 3 cups tomato juice
- 1 cup vegetable broth
- 1/4 cup red wine vinegar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cooked small pasta like ditalini
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
Instructions:
Put tomatoes, cucumber, red bell pepper, red onion, and garlic in a blender
