Goat Cheese and Caramelized Onion Potato Galette



This Goat Cheese and Caramelized Onion Potato Galette is a fancy and tasty dish that's great for any event. Thinly sliced potatoes are baked to a golden color on top of layers of creamy goat cheese and sweet caramelized onions. The flavors and textures come together in a delicious way.

Ingredients:

  • 2 large potatoes, thinly sliced
  • 1 tablespoon olive oil
  • 2 onions, thinly sliced
  • 2 tablespoons butter
  • 4 ounces goat cheese, crumbled
  • Salt and pepper to taste
  • Fresh thyme leaves for garnish

Instructions:

Preheat oven to 375F 190C

In a skillet, heat olive oil over medium heat

Add onions and cook until caramelized, about 15-20 minutes

Set aside

In a separate skillet, melt butter over medium heat

Add potato slices and cook until golden brown, about 5-7 minutes per side

Season with salt and pepper

Arrange half of the potato slices in a greased baking dish, overlapping slightly

Spread half of the caramelized onions and half of the crumbled goat cheese over the potatoes

Repeat with remaining potatoes, onions, and goat cheese

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly

Garnish with fresh thyme leaves before serving
