A tasty, hearty soup that you can make in the slow cooker that is low in carbs. This meal is easy to make and full of healthy things like tender chicken, beans, and vegetables.
Ingredients:

- 5 lbs boneless, skinless chicken breasts, diced
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 can 14 oz diced tomatoes, undrained
- 1 can 10 oz diced tomatoes with green chilies, undrained
- 1 can 4 oz diced green chilies, drained
- 1 can 15 oz black beans, drained and rinsed
- 1 can 15 oz pinto beans, drained and rinsed
- 1 cup frozen corn kernels
- 4 cups chicken broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon oregano
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, avocado slices, cilantro
Instructions:
In the slow cooker, add diced chicken, chopped onion, minced garlic, diced bell pepper, diced tomatoes, diced tomatoes with green chilies, diced green chilies, black beans, pinto beans, frozen corn, and chicken broth
Spices like oregano, cumin, chili powder, salt, and pepper should be added
Mix things together well
Cover and cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours, until the chicken is soft and the flavors are mixed well
To serve, use two forks to shred the chicken and stir the soup
Top it off with shredded cheese, sour cream, avocado slices, and cilantro while it's still hot
