Ingredients:
- 200g rice noodles
- 1 cup fresh coconut, shredded
- 1/2 cup cucumber, thinly sliced
- 1/2 cup red bell pepper, thinly sliced
- 1/4 cup fresh cilantro leaves
- 2 tablespoons roasted peanuts, crushed
- 2 limes, sliced
- 2 tablespoons brown sugar
- 1 tablespoon vegetable oil
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sriracha sauce adjust to taste
- Salt and pepper to taste
Instructions:
Cook rice noodles according to package instructions, then rinse with cold water and drain
In a large bowl, combine the cooked noodles, shredded coconut, sliced cucumber, sliced red bell pepper, cilantro leaves, and crushed peanuts
Toss to mix well
In a small skillet, heat vegetable oil over medium heat
Add the lime slices and brown sugar
Caramelize the limes for about 2-3 minutes on each side until they become golden and slightly crispy
Remove from heat
In a small bowl, whisk together soy sauce, rice vinegar, sriracha sauce, salt, and pepper to make the dressing
Pour the dressing over the noodle salad and toss until everything is well coated
Serve the salad in bowls, garnished with caramelized lime slices on top
