Vegan Tomato Chickpea Soup



This Vegan Tomato Chickpea Soup is a delicious and healthy meal that's ready in about 30 minutes. Packed with protein and fiber from chickpeas, and bursting with flavor from tomatoes and herbs, it's a satisfying dish perfect for any time of the year.

Ingredients:

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 can 14 oz chickpeas, drained and rinsed
  • 1 can 14 oz diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

In a large pot, heat olive oil over medium heat

Add onion and garlic, saut until softened

Add carrot and celery, cook for 3-4 minutes

Stir in chickpeas, diced tomatoes, vegetable broth, thyme, and oregano

Bring to a simmer and let cook for 20 minutes

Season with salt and pepper to taste

Serve hot, garnished with fresh parsley
