Ingredients:
- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 can 14 oz chickpeas, drained and rinsed
- 1 can 14 oz diced tomatoes
- 4 cups vegetable broth
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
In a large pot, heat olive oil over medium heat
Add onion and garlic, saut until softened
Add carrot and celery, cook for 3-4 minutes
Stir in chickpeas, diced tomatoes, vegetable broth, thyme, and oregano
Bring to a simmer and let cook for 20 minutes
Season with salt and pepper to taste
