It's a lovely dessert that shows off the natural sweetness of pears: Vegan Marguerite d'Anjou Pear Cake. It's moist and fluffy, and you can eat it for any reason.
Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup unsweetened almond milk
- 1/2 cup vegetable oil
- 2 tbsp apple cider vinegar
- 1 tsp vanilla extract
- 2 ripe d'Anjou pears, thinly sliced
Instructions:
Preheat the oven to 350F 175C
Grease and flour a 9-inch round cake pan
In a large mixing bowl, combine flour, sugar, baking powder, baking soda, and salt
In a separate bowl, whisk together almond milk, vegetable oil, apple cider vinegar, and vanilla extract
Pour the wet ingredients into the dry ingredients and mix until just combined
Pour the batter into the prepared cake pan
Arrange the sliced pears on top of the batter in a decorative pattern
Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean
Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely
